A supply chain story that began over 30 years ago
In the 1990s, as many small food shops gradually disappeared, Giovanni Fabbri began building a new, direct relationship with local farmers.
In collaboration with the Department of Agricultural Genetics at the University of Florence, the first supply chains were created, also involving trusted mills.

The raw material
We start with your ancient grain, or with grains selected together, and entrust them to our trusted mills to be transformed into semolina, preserving the identity, characteristics and traceability of the raw material.
The Fabbri Method
Knowledge passed down through generations, combined with bronze-die extrusion and an exceptionally slow drying process, always below 38°C, to create pasta that is flavourful, firm, elastic and highly digestible.
Your project
We guide you step by step, from selecting the grain to milling. We take care of the pasta making and packaging, keeping you updated throughout every stage of production, until your finished pasta is ready to be returned to you.
